Stainless Steel

Fermentation (the process of turning grape juice into alcohol) may be done in a variety of vessels depending on the types of flavors a winemaker wants to produce. White wine fermentation often takes place in stainless steel tanks with lower heat levels to prevent rapid oxidation. Chardonnay is an exception, as many winemakers prefer to put the Chardonnay juice in sealed oak barrels for fermentation to influence flavor development.
